- 1 Tbsp olive oil
- 2 cloves garlic or 1 teaspoon of garlic powder
- 1 medium onion
- 3 medium carrots
- 1 cup uncooked green lentils
- 2 Tbsp curry powder (hot or mild)
- Quarter tsp cumin powder
- Quarter tsp tumeric powder
- 1 15oz. can tomato sauce
- Salt to taste
Boil lentils for 20 minutes until cooked.
1.) Place onions in a separate pan and cook onions until they are clear
2.) Add tomatoes to the pan, along with all spices
3). When cooking add tomatoes, if a little water if necessary
4.) When sauce is ready, add cooked lentils and let is cook for another 3-5 mins
I served them up, with 2 fingers of plantin and half an avocado.
